INGREDIENTS

Magic Beans is a hearty & wholesome vegetable-rich casserole that’s naturally very high in fibre. Per 100g it provides 119 kcal of energy, 4.5g of fat (of which 1.2g are saturates), 12g of carbohydrates (4.8g sugars), 4.6g of fibre, 5.1g of protein and 0.57g of salt. A full 500g portion delivers 594 kcal, 22g of fat (5.8g saturates), 61g of carbohydrates (24g sugars), 23g of fibre, 25g of protein and 2.8g of salt. High in fibre, it’s great for gut health, steady energy and fullness. All sugars in this dish come naturally from vegetables and beans.

NUTRITIONAL INFORMATION

Spoon over rice or creamy mashed root veg. Use as a rich base for a veg lasagna (or a moussaka with a pinch of cinnamon). Pile onto nachos with melted cheese and a dollop of sour cream.

A Real Reason Behind It All. 

For years, I chased accolades in fast, high-pressure restaurant kitchens. Food was my whole world — until eventually, the pace and the pressure caught up with me. I burnt out. Properly. And with that came a long stretch where my physical and mental health took a real hit. Stepping away was the only option. So I did. I took time to travel — slowly, quietly, without a plan. And in that space, I found myself returning to the one thing I still had the energy for: cooking simply, gently, and just for myself. Nothing fancy. No rush. No tickets, no timers, no performance. Just real food — vegetables, beans, broth, grains, herbs — cooked with intention, and a kind of care I had forgotten in the noise of high-performance restaurant life. And something unexpected happened. I started to feel better. My energy steadied. My sleep improved. My mind softened and lifted. My gut calmed. Little by little, I rebuilt myself — one nourishing bowl at a time. It turns out the old saying is true: you really are what you eat. And when you eat food that’s rooted in whole ingredients, high in fiber, kind to your gut, and cooked with genuine care… your body responds. Your mind, too. When I eventually moved home, I began cooking this way for my family.
